Grind together in a blender or with a mortar and pestle. Recipes that are particular stand-outs in my mind are the Broiled Pickled Onions (I love the idea of a little char in a pickle), the Maple Plum Mostarda (it’s made with mustard seeds rather than the oil, so that the ingredients are accessible for all makers), and the Green Chile Jam (I want to dollop some on eggs immediately). If you add more water, pour between jars and not directly on them (this is where the extra pot of heated water comes in handy). Pesto is one, and I think the tomato/fennel sauce this month is a definite candidate. If the centre of the lid is suctioned down, your jar has fully sealed. Strawberries left alone for a couple of hours with sugar added to them will create their own syrup.
