Putting Food By by Ruth Hertzberg is a classic, originally published in the 60's/70's but updated and with info that is timeless. Prepare the brine by combining the water, vinegar and salt in a large saucepan. Since I was making applesauce to can, I held 2 quarts of applesauce out to the side for my apple butter. I loved the rich garlic flavor combined with the seasoned oil. I’ll go into more detail on that below… Like “Egg” and “Roast”, this is a beautiful book physically.
